Ginger Oleoresin is obtained by percolating the powdered rhizomes of Ginger. Its botanical name is Zingiber officinale. It holds 1-2 percent of volatile oil, 5-8 percent of pungent acrid oleoresin and starch. It is also famous as Jengibre, Zanjabil, Chiang. The oil ofJengibre, Zanjabil, Chiangcommercially called Gingerin that contains pungent principles viz. Shogaol and gingerolapart from the volatile oil of ginger.
Uses:
- This oil is engaged for flavoring all kinds of food products and making perfumery products.
- It is also used as carminative, aromatic, stomachic and as a stimulant.
